Granola

I live in Seattle, and yes - I am a granola eater. I actually really hate that term "Granola Eater"..... Seriously? I have never smoked pot a day in my life, I don't wear Birkenstocks, and I shave my legs every day. And yes, I eat granola on a regular basis. It's packed full of natural awesomeness and tastes amazing: plus, it's quick and easy on those days you don't have time to make anything. Throw a little fresh fruit in the bowl, and you are set. Here is my recipe for granola. Feel free to play around with it to suit your tastes and desires, this is meant to just be a springboard to get you started. This also tastes great sprinkled on yogurt for a quick snack.





INGREDIENTS


10 Cups Oats
1 Cup Wheat Bran
½ Cup Flax Seeds
2 C ups Coconut
2 Cups Slivered Almonds
1 Cup Pumpkin Seeds
1 ½ Cup Water
2/3 Cup Canola Oil
2/3 Cup Honey
2/3 Cup Sorghum
1 tsp. Salt
1 Tb. Cinnamon
1 tsp. Nutmeg
1 Tb. Vanilla
2 tsp. Powdered Stevia
2 cups dried fruit of choice



DIRECTIONS

Preheat oven to 250°

In a large mixing bowl, combine oats, wheat bran, flax seeds, coconut, almonds and pumpkin seeds: stir. In another bowl combine remaining ingredients and whisk until well blended. Pour the liquid ingredients over the dry and stir until well coated.

Spread onto 3-4 jelly roll pans. Bake two sheets at a time for 20 minutes. Stir, rotate pans and bake another 20 minutes. Stir and rotate pans and bake for one last 20 minutes.

Cool and add dried fruit if desired. Play around with different nut/seed/dried fruit combinations.
