Heatlhy Chocolate Muffins

How often do you get a chocolate craving that you painfully ignore because you know it is a forbidden fruit? Now you don't have to. I have come up with an amazing chocolate muffin recipe that is lower in sugar and fat than a traditional chocolate muffin, and will ward off those chocolate cravings that you sometimes get. Make a bunch and put them in your freezer for a quick breakfast or snack.










INGREDIENTS


1/3 Cup Brown Sugar
1/3 Cup Honey
½ Cup Butter
4  Egg Whites
¼ Cup Coco
½ tsp. Powdered Stevia
2 ½ Cups Whole-Wheat Flour
1 ½ Cups Applesauce
1 tsp. Baking Soda
2 tsp. Vanilla
3 Tb. Vital Wheat Gluten
1 Cup Pecans Pieces – Optional



DIRECTIONS

Preheat oven to 350°

Beat together brown sugar, honey and butter until creamy. Add egg whites, coco and stevia and continue beating until well mixed. Add flour, applesauce, baking soda, vanilla and vital wheat gluten: beat slowly, scraping bowl often, until creamy.

Spoon batter into paper lined muffin tins and sprinkle with pecan pieces if desired. Bake for 18-20 minutes, or until toothpick comes out clean.
