Several years ago, when Papa Murphy's came out with their taco pizza, Aaron and I fell in love with it. We got tired of waiting for Cinco de Mayo every year for this pizza to grace the menu, so we decided to come up with our own version. With my whole-wheat crust, and loaded with veggies, it's a lot healthier too.
INGREDIENTS:
Re-fried Beans
Mozzarella Cheese
Mexican Cheese
Diced Tomatoes
Diced Green Onion
Sliced Olives
Diced Red Peppers
Beef or Chicken Taco Meat (I obviously don't eat the taco meat, but Aaron likes it on his half ;o)
Hot Sauce
Guacamole
Low-Fat Sour Cream
DIRECTIONS:
Pre-heat oven to 450 degrees.
Start with your slightly cooked pizza crust - click on the whole-wheat pizza crust link to get the recipe.
Instead of pizza sauce, spread re-fried beans on your crust - I like Amy's organic Black Bean, fat-free re-fried beans. Throw on a handful of mozzarella cheese. Add any toppings that suite your fancy. Top with just enough Mexican cheese to hold all of your toppings in place when the cheese is melted.
Bake in pre-heated oven until cheese is melted and slightly browned. Top with Hot Sauce, Guacamole, low-fat sour cream, or whatever you would like.
I have not put measurements on the above listed ingredients for a reason, as this recipe is more of a guideline than specific directions for a pizza. Sprinkle what you like, put a ton of what you love (except the cheese, try and be light handed with that, as it's the highest fat/calorie item on the list), and leave off what you don't care for. Think about the ingredients you would put on a taco, even if it's not listed above, and throw it on, make it your own, and enjoy!
