Mexican Rice


If you are what you eat, then I should be speaking fluent Spanish soon: I love me some Mexican food, and make it on a regular basis. One of my favorite dishes is this Mexican Rice, because it goes with every other dish you can make. It's full of fresh veggies, and using brown rice, it packs a nutritional punch as well.


INGREDIENTS:


1 cup Brown Rice
1 Tb. Olive Oil
1 ½ Cups Water
1 tsp. Cumin
1 tsp. Dried Cilantro
1 Tb. Garlic
½ Onion, finely chopped
½ Red Bell Pepper, finely chopped
½ Fresh Jalapeno Pepper, chopped
1 Tomato chopped
1 can black beans, rinsed and drained 



DIRECTIONS:
In a medium sauce pan, cook rice in oil over medium heat for about 2 minutes. Pour in water and bring to a boil: season with cumin, cilantro and garlic. Stir in onion, red pepper, jalapeno, diced tomato and black beans.  Bring to a boil, cover and reduce heat to low. Cook for 45-50 minutes.
