A very light and delicious salsa combining a hearty helping of fruits and veggies. This is one of my favorite salsas to make, and it's quick and easy to boot. My favorite way to eat it is on top of grilled Salmon, which is precisely what we did last night. Yum!
INGREDIENTS
1 Mango
1/4 Cup Chopped Red Bell Pepper
1 Green Onion, Chopped
2 Tb. Chopped Cilantro
1 Fresh Jalapeno, or to taste, finely chopped
2 Tb. Lime Juice
1 Tb. Lemon Juice
DIRECTIONS
Mix all ingredients. Cover and allow to sit at least 30 minutes before serving.
