Mini-Quiches

I am all about doing things that will make my life easier and healthier. Making these little quiches does both! Win, win. Make up a batch of these, throw them in the freezer, and you have a quick breakfast in the morning. Grab one or two, pop them in the microwave, and then throw them on an English Muffin or roll them up into a small tortilla shell. Hot, delicious and packed full of nutrient goodness.








INGREDIENTS:

1/2 Cup finely Chopped Onion
1/2 Cup Red Pepper
1/2 Cup Chopped Zuchini
1/2 Cup finely Chopped Broccoli
2/3 Cup Grated Mozzarella Cheese
1/4 Cup Grated Parmesan Cheese
12 Egg Whites

DIRECTIONS:

Preheat oven to 350 degrees.

Saute onion, red pepper, zucchini and broccoli until tender: remove from heat and cool for 5 minutes. Combine remaining ingredients in a large bowl and whisk until well blended. Stir in veggies. Spoon mixture into mini muffin tins coated with non-stick spray. Bake for 20 minutes, or until set.
