I have started to re-add a little bit of meat back into my diet. Not a ton, but on occasion. I just wasn't getting enough protein so a little boost here and there is good for me. I never eat big slabs of fatty meat however, and always look at it as an accompaniment to my main dishes. I tried out this recipe last night and really enjoyed it. These meatballs are made with ground turkey, zucchini and Triscuits for extra fiber and whole grains. Yum!
INGREDIENTS
1 Pound Ground Turkey
2 Cups Grated Zucchini (1 large zucchini)
6 Triscuits, finely crushed (about 1/4 cup. I used Kashi brand)
2 Egg Whites
4 Green Onions, thinly sliced
4 Cloves Garlic
1 tsp Italian Seasoning
1/2 tsp Pepper
DIRECTIONS
Preheat oven to 350 degrees.
Mix all ingredients and form into balls. The size is up to you and how big you like them. I made about 20 2" meatballs. Bake for 20-30 minutes depending on the size of you meatballs.
Serve with Spaghetti noodles and your favorite tomato sauce.
