Lentil Sloppy Joes

Here is a vegan option for an old fashioned favorite. With all the same spices and tomato base, it is pretty darn close to it's meat filled brother, but is packed with heart healthy lentils instead. It's quick and easy to make as well, and is great on a cold winter night!










INGREDIENTS:

1 Pound Lentils
5 Cups Water
1 Green Pepper - diced
1/2 Red Pepper - diced
1 Yellow Onion - Diced
3 Cloves Garlic
1 Can Diced Tomatoes with Green Chilies
1 Can Tomato Paste
1 Tb. Chili Powder
1 tsp. Cumin
1/4 tsp. Paprika
1/2 tsp. Salt
1/4 tsp Pepper
1 Tb. Mustard
1/2 Tb. Vinegar

DIRECTIONS:

Rinse and drain one pound of lentils. Place them into a large saucepan. Pour in five cups of cool water, cover and bring to a boil. Reduce heat to medium-low and simmer for 15-20 minutes or until the lentils are tender. Drain and set off to the side.

Saute peppers, onion and garlic in a tablespoon or so of water until softened. Stir in tomatoes, tomato paste and spices and mix well: add lentils. Turn burner on low and simmer for 10-15 minutes.... If I have a busy day I will sometimes make this up an hour or two before dinner and just let it simmer on super low the whole time - this really lets all of the flavors set and dinner is ready when I am.
