Deep Dish Cookie Pie

I have been sick this week and haven't had much of an appetite. When I do have one it's usually just for snack foods, and I haven't had much energy to stand in the kitchen cooking. So, for my recipe this week I am sharing one of my favorite recipes from on of my favorite food bloggers - Chocloate Covered Katie. Hubby and I eat this little treat at least once a month -  it's really verging on obsession. The beauty of it is, it's not bad for you: I would say it's almost healthy.

Mini-Berry Pies

One of the joys of living in the Pacific Northwest is the bounty of berries we have here. Blackberries are EVERYWHERE and with a short hike you can have your hearts content with wild blueberries and huckleberries. With that comes pie of course! With just the hubby and I at home we don't need a full pie so I wanted to make it a little smaller and a lot healthier. These little mini pies fit the bill perfectly on both fronts with whole-grain, no refined sugars and plenty of disease fighting berries.

Dark Chocolate Zucchini Cupcakes

Zucchini is running rampant in my garden right now and I have been looking for something yummy, healthy and different to do with it. I was playing around in the kitchen the other day and came up with this amazing cupcake. It is light, fluffy, amazingly delicious and yes, it's even good for you. So enjoy! You can have your cake and eat it too.

Strawberry Fruitsicles

The summer we are having is so amazing that it only comes around every couple of years and looking for ways to stay cool has been the main past time the last few days. I made these wonderful delights last week and shared them on my Family Strong Blog, but have been enjoying them SO much I thought I would put them on here as well. They are delicious, packed full of fruit, good for you and most importantly - COLD. Best of two worlds.

Banana Pops

I love ice cream. It’s one of my favorite foods, and if I could eat it every day without my backside spreading to create its own solar system I would. Unfortunately ice cream is reserved for those treat days that we set aside for ourselves every couple of weeks. BUT, I do make a treat in the summer time that is the next best thing to a big bowl of creamy deliciousness. It’s frozen, yummy, and feels like you are cheating by eating an ice cream bar. The best part? It’s actually good for you.

Chocolate-Pumpkin Brownie

Now, don't get too used to me putting sweet treats on here, but once in a while you just have to let lose and allow yourself something special. Sunday is my treat day - the day I allow myself to have whatever I want. The beauty of this recipe is that it's actually packed with a lot of good stuff so you can eat it guilt free. You'll never guess what's in it by the way it tastes, and everyone will feel like they are getting a decadent treat. Now you can have your cake and eat it too.
