Pumpkin Flax Granola Bar

I'm not afraid to admit that I have a new obsession with my food. These granola bars are amazing and I have a hard time eating just one they are so tasty. The great thing, however, is if you couple them with a piece of fruit one is enough. They are perfect for filling an empty stomach halfway through the day and keeping hunger at bay for quite some time after consuming them. Oh, and did I mention that they are amazingly delicious?! I can't wait for snack time!

Strawberry Fruitsicles

The summer we are having is so amazing that it only comes around every couple of years and looking for ways to stay cool has been the main past time the last few days. I made these wonderful delights last week and shared them on my Family Strong Blog, but have been enjoying them SO much I thought I would put them on here as well. They are delicious, packed full of fruit, good for you and most importantly - COLD. Best of two worlds.

Banana Pops

I love ice cream. It’s one of my favorite foods, and if I could eat it every day without my backside spreading to create its own solar system I would. Unfortunately ice cream is reserved for those treat days that we set aside for ourselves every couple of weeks. BUT, I do make a treat in the summer time that is the next best thing to a big bowl of creamy deliciousness. It’s frozen, yummy, and feels like you are cheating by eating an ice cream bar. The best part? It’s actually good for you.

Mango Salsa

A very light and delicious salsa combining a hearty helping of fruits and veggies. This is one of my favorite salsas to make, and it's quick and easy to boot. My favorite way to eat it is on top of grilled Salmon, which is precisely what we did last night. Yum!

Heatlhy Chocolate Muffins

How often do you get a chocolate craving that you painfully ignore because you know it is a forbidden fruit? Now you don't have to. I have come up with an amazing chocolate muffin recipe that is lower in sugar and fat than a traditional chocolate muffin, and will ward off those chocolate cravings that you sometimes get. Make a bunch and put them in your freezer for a quick breakfast or snack.

Granola

I live in Seattle, and yes - I am a granola eater. I actually really hate that term "Granola Eater"..... Seriously? I have never smoked pot a day in my life, I don't wear Birkenstocks, and I shave my legs every day. And yes, I eat granola on a regular basis. It's packed full of natural awesomeness and tastes amazing: plus, it's quick and easy on those days you don't have time to make anything. Throw a little fresh fruit in the bowl, and you are set. Here is my recipe for granola. Feel free to play around with it to suit your tastes and desires, this is meant to just be a springboard to get you started. This also tastes great sprinkled on yogurt for a quick snack.

Pumpkin/Almond Granola Bars

One of the biggest steps to eating healthier is to eat foods full of organic, natural, recognizable ingredients: if I don't recognize an ingredient I probably won't eat it. The best way to know what is in your food is to put it there yourself, then you know exactly what you're eating. I make a lot of my own food. I am even one of those wack-o's that has a wheat grinder to make my own flour. You don't have to go that far if you don't wish to (though the quality of food cannot be beat!), but making simple changes make big differences. Try out these amazing granola bars to start. They're easy, and I promise they will not stay around long.

This is one of my favorite snacks as soon as I am done with my weight training. It's quick, easy, satisfying and packs a protein punch.

Here's the complicated recipe - ready?

Mix and eat. Done!
