Sweet Potato Casserole

For my recipe of the week I am going to share a dish from one of my favorite food bloggers: Angela Liddon from Oh She Glows. I made this as part of our Thanksgiving spread this year and it was amazingly yummy! Enjoy those sweet potatoes while they are in season by whipping up this yummy side dish.

Sweet Potato Fries

I love french fries. When it comes to comfort foods, they are definitely at the top of my list. I wish they would come out with a study that proved once and for all french fries built muscle, helped make you heart healthy and helped keep your waist trim and sexy. Alas, it looks like they will remain on the "eat sparingly" column. With my sweet potato fries however, you can eat your fries almost guilt free: and using sweet potatoes in place of russet gives you a boost of vitamin A, which is great for the immune system.

Southwest Couscous Salad

As the summer months approach us, I find myself eating less soup and getting more into my salads. This is an easy salad to throw together, tastes just as good the second day as it did the first, and is great for quick and healthy lunch.

Mango Salsa

A very light and delicious salsa combining a hearty helping of fruits and veggies. This is one of my favorite salsas to make, and it's quick and easy to boot. My favorite way to eat it is on top of grilled Salmon, which is precisely what we did last night. Yum!

Mexican Rice


If you are what you eat, then I should be speaking fluent Spanish soon: I love me some Mexican food, and make it on a regular basis. One of my favorite dishes is this Mexican Rice, because it goes with every other dish you can make. It's full of fresh veggies, and using brown rice, it packs a nutritional punch as well.
