Pumpkin Flax Granola Bar

I'm not afraid to admit that I have a new obsession with my food. These granola bars are amazing and I have a hard time eating just one they are so tasty. The great thing, however, is if you couple them with a piece of fruit one is enough. They are perfect for filling an empty stomach halfway through the day and keeping hunger at bay for quite some time after consuming them. Oh, and did I mention that they are amazingly delicious?! I can't wait for snack time!

Mexican Stir Fry

This is one of my most favorite dinners. It's really quick if you have a rice maker or already have your rice made ahead of time, and it's super healthy - a great way to get a lot of veggies into your diet! This dish is my go-to when I don't have a lot of time. YUM!

Sweet Potato Casserole

For my recipe of the week I am going to share a dish from one of my favorite food bloggers: Angela Liddon from Oh She Glows. I made this as part of our Thanksgiving spread this year and it was amazingly yummy! Enjoy those sweet potatoes while they are in season by whipping up this yummy side dish.

Whole-Wheat Corn Bread

I love corn bread. It's probably my favorite quick bread and I almost prefer it with my spaghetti over french bread. It's faster to make, and tastes so  yummy. My only problem with it is its hard to only eat one piece. I have revamped my old, traditional recipe, to be healthier. Whole grains, honey instead of sugar, and lower-fat  make this more like a bread than a cake. It's a winner with even the toughest of judges.

Mushroom-Tomato Spaghetti Sauce

I grew up eating spaghetti at least once a week - it was my dad's favorite food. I'm surprised he didn't name me Donatella.... however, I wouldn't mind having the amazingly thick hair that comes with the Italian heritage. My spaghetti is quite different than his was, a little more heart healthy, but just as good as what I grew up with. Enjoy this great Mushroom-Tomato Sauce and Gustate il vostro pasto.

Veggie Enchiladas

If the saying "you are what you eat" is true, I should be speaking fluent Spanish soon. I love Mexican food and I think we eat it at least once or twice a week. The beauty with Mexican is it's easy to make it healthy and add a lot of extra veggies into your diet with all the same wonderful spices. These enchiladas are super easy to make, filling, and good for you. What's not to like about that?

Deep Dish Cookie Pie

I have been sick this week and haven't had much of an appetite. When I do have one it's usually just for snack foods, and I haven't had much energy to stand in the kitchen cooking. So, for my recipe this week I am sharing one of my favorite recipes from on of my favorite food bloggers - Chocloate Covered Katie. Hubby and I eat this little treat at least once a month -  it's really verging on obsession. The beauty of it is, it's not bad for you: I would say it's almost healthy.
