Apple-Cinnamon Oatmeal

The days are getting shorter, the air crisper and waking up in the morning is becoming more difficult. As fall settles in, getting out of bed will be even more undesirable.  I despise being cold and know as soon as I throw those covers off it's not going to be pleasant. Besides, my brain is telling me, "It's dark outside stupid, you are supposed to be sleeping!" There is something comforting however, about sitting down to a hot cup of tea and a warm bowl of oatmeal. I eat oatmeal a lot in the fall and winter, and the best thing about this amazing little grain is its versatility. There are so many things you can do with it that it never gets old. Cinnamon is one of my favorite spices, and coupled with apples this is a very satisfying bowl of oats.




Ingredients:

1/2 Apple, diced
1/2 Cup Oats
1 Cup Water
1 tsp Honey
1/2 tsp Cinnamon
Milk of Choice (optional)

Directions:

Put water and diced apples in a small pan and bring to a boil. Add oats and turn head down to medium-low. Cook oats for 5 minutes - you water should be mostly cooked into the oats by this time and the oats soft. Cover the pan with a lid and let sit for 5 minutes while the remaining water is soaked into the oats. Your oatmeal should be nice and soft and thick by this point.

Drizzle on your honey, sprinkle in the cinnamon, and add a little milk if desired. Stir and enjoy!
