Strawberry Fruitsicles

The summer we are having is so amazing that it only comes around every couple of years and looking for ways to stay cool has been the main past time the last few days. I made these wonderful delights last week and shared them on my Family Strong Blog, but have been enjoying them SO much I thought I would put them on here as well. They are delicious, packed full of fruit, good for you and most importantly - COLD. Best of two worlds.










Ingredients
1 Frozen Banana
2 Cups Frozen Strawberries
1/2 Cup Low-Fat Vanilla Yogurt
1/8-1/4 tsp Powdered Stevia (depending on your taste)
1 tsp Chia Seeds
1 tsp Vanilla
Just enough milk to get your blender to run

Directions
A high powered blender is optimal for this recipe. You could probably do it with a regular blender, your final product will just be less thick.

Put all ingredients into your blender. Adjust the amount of milk based on how your blender is performing - use just enough to get it to mix everything, but only just enough. Blend until completely mixed and your ingredients resemble a sorbet. I have a Vitamix, so I use the tamper to push down the ingredients as I blend them, as I like this to be as thick as ice cream. Sometimes I will even stop here and just eat it like this for lunch. Who the heck would complain about eating ice cream for lunch?!!

To make your fruitsicle, spoon mixture into popsicle molds.... don't have any, no worries. I made mine in Dixie Cups and it turned out great and just the right size. Once all molds are filled, place in your sticks and freeze. You should be good to rock it and shock it in about two hours.
