Egg and Spinach on Toast

One of my favorite protein power breakfasts, this is easy, yummy and perfect before a good weight session.












INGREDIENTS:

2 egg whites
1 cup fresh spinach
whole-wheat toast (I use my homemade bread for the toast, but you can buy some great natural/whole breads. My favorite is Dave's Bread)

DIRECTIONS:

Lightly spray a skillet with non-stick spray and toss in your spinach. Cook for just a minute or two, until the leaves wilt and then put the egg whites on top. Cook both sides of egg until fully cooked and then top on your toast.

I love to eat this with a hot cup of green tea.
